California Linguine

Broccoli, carrots, cauliflower and zucchini coated with Parmesan and basil is a great flavor combination.

Ingredients

  • 6 oz. linguine
  • 1 (10 oz.) package frozen Pictsweet Farms Baby California Vegetables
  • 1 tablespoon vegetable oil
  • 5 tablespoons water
  • 1 (2.5 oz.) can black olives, sliced and drained
  • 1 (16 oz.) can diced tomatoes, drained
  • 1 tablespoon basil, crushed
  • 1 tablespoon dried parsley flakes
  • 1 1/2 cups Parmesan cheese, grated

Directions

  1. PREPARE noodles according to package directions, drain and keep warm. Prepare frozen vegetables according to package directions and drain.
  2. HEAT skillet over high heat and coat with oil. Add vegetables and water and stir-fry for 3 minutes.
  3. REDUCE heat to medium. Add olives, tomatoes, basil and parsley. Continue cooking for 1 minute.
  4. ADD linguine and Parmesan cheese. Gently toss to coat.
